Honey Cake with Vanilla Frosting
1/4 pound plus 3 tbsp butter
1/2 cup brown sugar
1/2 cup honey
1 1/2 tbsp water
1 2/3 c flour
1 1/2 tsp baking powder
1/2 tsp cinnamon
2 eggs beaten
Grease and line with parchment paper a 8 1/2 in springform pan. Put the butter, sugar, honey, and water in a small saucepan and heat over low heat until the butter is melted and the sugar dissolved, stirring a few times.
Take off heat and let cool 15 minutes.
Preheat oven to 350 degrees F. Sift flour, baking powder, and cinnamon into a bowl. Add the honey mixture and eggs and beat until smooth.
Pour into prepared pan and bake for 30 - 35 minutes or until toothpick entered in center comes out clean.
Leave in pan to cool!
Vanilla Frosting
7 tbsp butter, softened
2 cups powdered sugar
1 1/2 tbsp water
2 -3 tbsp milk
1 -2 tsp vanilla
Mix softened butter, powdered sugar, and water. Slowly add milk to desired consistency. Add vanilla. Spread on cooled cake.
Your cake will keep for up to a week when covered. Or just eat it. All of it.
