a story about mini muffins

One morning a little girl approached her mother and said, "lets make muffins!"

So the mother said to her daughter, "lets make banana muffins, mini ones, with chocolate chips".

And the daughter said, "oh yes, be soooo nummy!"

So the mother mashed some ripe banana's, lined the mini-muffin pan with heart liners, measured flour, cracked eggs, and mixed until it was just right.

And while the muffins baked the daughter placed alphabet magnets on the fridge calling out each letter while the baby chewed on a giraffe toy.

And then the first batch was ready.

The daughter ate four, the mother ate six. And the mother thought, "i wonder how many mini-muffins equal a large muffin?"

And when their tummies were full they decided to watch part of The Sound of Music and the mother sang along.

The daughter looked at her and said, "be quiet".

So the mother stopped singing.

Mini Banana Chocolate Chip Muffins with Whole Wheat Flour (that's long)

1/2 c butter - softened
3/4 c sugar
2 eggs
3-4 ripe banana's - mashed
1/3 c milk
1 tsp fresh lemon juice
1 1/2 tsp b powder
1/2 tsp soda
1/4 tsp salt
1 1/2 c whole wheat flour
1/2 c white flour
1/2 c semi-sweet chocolate chips

Mix sugar and butter. Add eggs, banana, lemon juice. Mix some more. Add dry ingredients alternately with milk. Stir in chocolate chips. Scoop into mini-muffin pan. I used a small cookie scoop, the amount was perfect. Bake at 400 degrees F for 10 - 15 minutes.
